this week's ice cream experiment: mint julep. i saw this recipe last summer and have been dying for it.
i changed it a bit:
- 1 cup bourbon
- 3/4 cup simple syrup
- 6 large sprigs fresh mint
- 1 quart half and half
- 8 egg yolks
make the simple syrup (equal parts sugar and water, boiled until the sugar melts.) in a saucepan, combine the simple syrup, and mint. over
medium-low heat, simmer the liquid for about 10 minutes, to infuse the
flavors. remove from the heat, mix in one cup of bourbon and cool completely.
in another sauce pan, add the cream. bring to a
gentle boil. whisk the egg yolks together. whisk 1 cup of the hot cream
into the egg mixture. slowly add
the egg mixture to the hot cream mixture. continue to cook for 4
minutes, stirring occasionally. remove from the heat and cool
completely.
strain the bourbon mixture. whisk the bourbon mixture into the
cream mixture. add the bourbon/cream mixture to the
electric ice cream maker. process according to manufacturer's
directions. and nom nom.
or you can serve with bourbon chocolate sauce - recipe follows...
- 4 oz. dark bitterwseet chocolate, chopped
- 3 tbs. milk
- 1 tbs. butter
- 1 tbs. bourbon
heat chocolate over medium low heat
until melted. add butter and milk. stir in bourbon, mix well and remove from heat. pour chocolate sauce on ice cream. delish.
